No instead it's something else entirely..
Similar to a Seinfield episode, it's about nothing. Well sort-of, I mean each Sienfield episode did have an underlying theme, so I guess I too do have that going for me.
The second part of the Lewisburg write-up is still under construction, it's just taking longer to pull the boredom out of my mind than I planned. Actually starting it has been the problem. So as I continue to work on that, here's some filler for you:
This is a Caveman Recipe of the Week. (yes I realize I owe you a recipe or two).
If you google Paleo Pancakesthis recipe is one that shows up near the top of the list, and one that even is mentioned in several links on the page. So I decided it.

Some of the differences to what I did:
One I did use Macadamia Nut Butter, 1/2 cup I felt was too much, next time I'll try using only a 1/4 cup. It just made it really nutty in my opinion.
Here's the ingredients:
• 2 eggs
• 1/2 C unsweetened applesauce
• 1/2 C nut butter (not peanut butter! - cashew/macadamia nut butter works well)
• 1/4 tsp cinnamon
• 1/4 tsp vanilla extract
• coconut oil

I also probably used more cinnamon than planned because mine all came out of the shaker at once. Probably 4 TBS worth.. (ok maybe not that much)
I also added some blueberries.
So how was it?
I wouldn't use the term "delicious" with it, however they were not bad at all, again a little too nutty.
Also cooking these and flipping - hmm not really ever being a pancake flipper guru, these take delicate skill to flip. Remember you're not really cooking with dough, so they do not act the same when it comes to flipping. They're more like a rebellious teenager.
I found I would rip one in half, and have to reassemble it on my plate.
Oh well, if you're interested check these out, several people are a fan of them, I don't think they're for me. But being a pancake lover, I've got a few more to try I'll keep you informed.
